Egg Bake Recipe
| GREEN CHILI EGG AND POTATO BAKE Prep: 15 min Bake: 1 hour Stand: 10 min 4 cups frozen shredded potatoes, thawed 1 can(15 oz) whole kernel corn, drained 1/2 red or green bell pepper, diced 1 can ( 7 oz) chopped green chilies, drained 1 3/4 cup shredded Colby-Jack or Cheddar cheese 12 eggs 3/4 cup creamed cottage cheese 1/2 tsp. cumin 1/2 tsp. garlic powder salt & pepper to taste 1/2 Tlbsp. minced onions Heat oven to 350 degrees. Spray 9x13 inch rectangular dish with cooking spray. Layer potatoes, corn, bell peppers, chilies, and 1 Cup of the cheese in the baking dish. Beat eggs, cottage cheese, onions, and spices with an electric mixer on medium speed until smooth. Slowly pour over potato mixture in dish. Sprinkle with remaining cheese. Cover and bake 30 minutes. UNcover and bake 30- 40 minutes longer or until knife inserted in center comes out clean. Let stand for 5 to 10 minutes before cutting. Enjoy! --- Steph Boyles |

OR ANYTIME EGG CASSEROLE 1/2 c. flour 1 tsp. baking powder 1 dozen eggs Tabasco sauce- a dash 2 c. ham or browned, crumbled sausage 1 lb. Monterey jack cheese, shredded 2 c. cottage cheese 1/2 c. oil 1/2 c. sliced green onions, optional
Mix together and place in buttered 9 x 13- inch pan. bake 15 minutes at 400*. Bake another 30 minutes at 350*. Lucy Nordwell |
